<p>Why are we feeding ourselves with so much highly processed soy foods? Most people assume eating soy is a healthy choice due to the amount of publicity surrounding the benefits of eating soy products. Given the way the industrial food model is structured, popular foods such as tofu are highly processed and take precedence over more traditional soy products. Why is this the case? The soy enterprise is one of the world&#8217;s wealthiest and most powerful multi-billion-dollar industries that promotes soy as a &#8216;wonder drug&#8217;.</p>
<p>The soybean itself is the seed of the soy plant. The soybean has many components, which has led to the proliferation of the widest array of soy foods seen on the market today. We are eating a &#8216;modified&#8217; version of soy products mostly in unfermented forms, made into various processed imitation foods, such as fast food hamburgers, sausages, soymilk(1), soy cheese, soy ice cream, and soy infant formulas.</p>
<div>Soy is also found in baked goods, beverages, yogurt, nutrition bars, crackers and many more products. Soy protein isolate and isoflavones in supplement form can also be found on the market. It is rather difficult these days to find foods that don&#8217;t contain soy flour, soy oil, lecithin (which is a soy extract used as an emulsifier in high fat-products), textured vegetable protein (TVP), hydrolyzed vegetable protein (usually made from soy) or unidentified vegetable oils.</div>
<div><span style="color: #ffffff;">. </span></div>
<p><span style="color: #7a1616; font-size: small;"><strong>Soy is a Phytoestrogen</strong></span></p>
<p>The main components of soy are protein and a class of compounds called isoflavones (a type of estrogen that can bind &#8216;estrogen receptors&#8217;). Isoflavones are the compounds being studied in relation to the relief of menopausal symptoms, prevention of cancer and bone loss, and reduction of heart disease risk. The extent to which soy isoflavones exert estrogenic and anti-estrogenic effects in humans is continually being studied.</p>
<div>The West has separated the soybean into two categories: protein and oil involving chemical extractions and other processing activities. We know that processed foods have low nutrient value, contain a high amount of salt and acrylamides(2), and other toxic additives known to be unhealthy. In contrast, the East uses the soybean as a whole food eaten in moderation. Asians continue to uphold their tradition by using fermented soy as a condiment and not as a replacement for animal food.</div>
<div><span style="color: #ffffff;">. </span></div>
<p><span style="color: #7a1616; font-size: small;"><strong>Let&#8217;s Look at Traditional Soy</strong></span></p>
<p>Traditional soy foods and most of the epidemiologic studies in Asia stem from whole soy foods as well as fermented soy. That includes tofu(3), tempeh, miso, edamame, soy sauce(4) and dry roasted soybeans.</p>
<p>The Chinese did not eat unfermented soybeans as they did other legumes, such as lentils, because they were aware of the large quantities of natural toxins or &#8216;anti-nutrients&#8217; that soy contains. They considered soy an inedible plant! Agricultural literature of the period speaks frequently of the soybean and its use in crop rotation. In particular, the soy plant was initially used as a method of fixing nitrogen.</p>
<div>The soybean did not serve as a food until the discovery of fermented techniques. In 206 B.C. Han Dynasty China, soybeans were first fermented to make douche. Also referred to as salted black beans (because they turn black during fermentation), douche is also the predecessor of soy sauce and miso. During the Ming dynasty, fermented soy appeared in the Chinese Materia Medica not only as an important food but as an effective remedy against diseases.</div>
<div><span style="color: #ffffff;">.</span></div>
<p><span style="color: #7a1616; font-size: small;"><strong>Soy and Hormonal-Related Disease</strong></span></p>
<p>We know that Asian populations have lower incidence of hormonal-related disease such as breast, uterine, and prostate cancers, as well as osteoporosis and cardio vascular diseases.</p>
<p>It is a misconception to think that Asians have a low rate of hormonal disease due to a high intake of soy. In fact, soy is not the main source of dietary protein in Asia. Rather, Asians consume mainly fermented soy products, in small amounts along with sea vegetables(6), a wide variety of fish and medicinal herbs.</p>
<div>In addition, it is part of the Asian culture to exercise regularly using internal practices such as Tai Chi(7), Qigong and martial arts, meditation and yoga(8). These traditional practices emphasize and improve deep breathing, circulation of the meridians and support a healthy, disease-free lifestyle.</div>

<li> The Japanese natto contains over 27 times more Vitamin K2(19) than curd cheese</li>
<li> During fermentation, bacteria removes the sugar from the glycoside, leaving free isoflavone, which is more easily absorbed by the body. The body absorbs a higher level of phytoestrogens found in fermented soy, such as miso, tempeh, natto and naturally brewed soy sauce</li>
<li> The harmful effect of unfermented soy stems from the consumption of processed substances enriched in isoflavones, which have little in common with whole or fermented foods made from the soybean</li>

<p><span style="color: #7a1616; font-size: small;"><strong>My Recommendations</strong></span></p>
<div>
<li> Incorporate seaweeds or sea vegetables in your diet or supplement with chlorella</li>
<li> Replace soy oil with organic coconut oil or extra virgin olive oil</li>
<li> Be wise and choose shoyu or tamari instead of processed soy sauce</li>
<li> Eat anti-cancer cruciferous vegetables(20), namely broccoli, cabbage, cauliflower, brussel sprouts, and collard greens</li>
<li> Lightly steam your vegetables and incorporate more raw food in your diet</li>
<li> Drink almond milk instead of soy milk</li>
<li> Incorporate flaxseeds and other foods that contain healthy phytoestrogens such as carrot leaves, onions, cranberry juice, kale, celery, broccoli, greens, green tea, green beans, fava beans, strawberries, pintos, and lentils &#8211; these all have 2mg or more phytoestrogens per serving.</li>
<li> Exercise daily</li>
<li> Avoid all processed foods including soy foods in all its forms, including soy protein isolates, hydrolyzed or textured protein (TVP). Check the labels.</li>
<li> Avoid supplements containing soy compounds such as isoflavones, geneistein and daidzein.</li>

<li> Purchase miso in the form of a paste as it rich in live enzymes</li>
<li> Blend miso into your vegetable or soup stock at the end of cooking</li>
<li> Dilute miso with water to make salad dressing, such as miso and extra virgin olive oil, miso and mustard, miso and honey, etc.</li>
<li> Stir 1 tsp of miso to a mashed avocado adding a few drops of lemon</li>
<li> Add 1 tbsp miso into your favorite porridge or omelette</li>
<li> Make a tea out of miso and drink in moderation</li>
</div>

<p>Tempeh is associated with better memory as it contains high levels of folate. Here is a delicious recipe:</p>

<p>1 tbsp of coconut oil or olive oil</p>
<p>1 leek</p>
<p>2 green onions</p>
<p>1 red pepper</p>
<p>3 garlic cloves</p>
<p>2 carrots</p>
<p>1 cup diced zucchini</p>
<p>½ cup sherry</p>
<p>1 chopped tomato</p>
<p>1 tbsp tamari or shoyu</p>
<li> Sauté leek, red pepper, garlic, green onions in oil for 3 minutes</li>
<li> Add the carrots and zucchini. Sauté for another 5 minutes</li>
<li> Add tempeh, sherry, tomato and tamari or shoyu and sauté another 5 minutes</li>

<div>Hello,</div>
<div>I have been longing to share my knowledge for treating acid reflux from my professional and clinical experience in caring for so many patients who consulted with me.  Patients were treated in a different manner, as there is more than one cause that stems from a troubling acid-reflux disorder, such as the absence of a gallbladder, a congested liver, lack of bile salts, a weak valve, etc.</div>
<p>Western medicine views acid reflux as having too much stomach acid or HCl which stands for hydrochloric acid. What is hydrochloric acid? It is a highly acidic, aqueous solution of hydrogen chloride produced by the stomach lining and is important for digesting protein.</p>
<p>As per the Scientific American Magazine, &#8220;HCl in the stomach lumen accomplishes four things:</p>
<blockquote style="margin-right: 0px;" dir="ltr"><p>1. helps break down ingested tissues for attack by digestive enzymes;</p>
<p>2. provides the correct pH for the action of those enzymes;</p>
<p>3. converts a catalytically inactive proenzyme to an active enzyme;</p>
<p>4. destroys invading micro-organisms in the stomach contents.&#8221;</p></blockquote>
<div>As we age, we produce less and less HCL, which impairs proper digestion. Undigested food sits in your stomach and ferments, producing gas and acid from the food you eat. In turn, this acid travels into the esophagus and causes a burning sensation. It is not the high acid in the stomach that is troubling you, but the travelling acid into the esophagus.</div>
<div>Eastern medicine views acid reflux as <em>too little stomach acid</em> being produced, which can be caused by</div>
<blockquote style="margin-right: 0px;" dir="ltr"><p>- stress</p>
<p>- congested liver</p>
<p>- a loose valve</p>
<p>- the constant intake of a calcium supplement</p>
<p>- missing gallbladder</p></blockquote>
